  • Thanks, dipshit! I used to a stone with a layer of parchment paper because I already messed up the other side and didn't feel like buying a new stone. Kept it nice and tidy. But yeah, I preheated for 45 minutes at 500, too.

  • I didn't have any problems with that this time, but I also don't think I did the dough right. It didn't rise as much as I was expecting so it turned out more like a thin crust, which was still really good. But if I get the dough right next time maybe I'll try parbaking it.   • I've made paneer before for Indian dishes but never thought to make mozzarella. I'll look into it! It seemed like some pretty great mozzarella from what little I know, but I might as well try my hand at making my own.

  • My last Domino's order was an hour late, the boxes were soaked through with grease, and the receipt was on top of the cheese of one of the pizzas. Domino's never even responded to my calls or emails to try to make it better, so they are on a Never Again list. I'll still be talking about that order when my preserved brain is on its deathbed in 2359.

    I've had good Domino's before, though, I think I just live near a shit store. If you live next to a good one then I'll happily take the compliment!

  • The sauce was my favorite part! We wrapped some bread slices around the leftover mozzarella and dipped them, it was great. It was really easy, too, just puree an entire can of tomatoes, roast some garlic in oil, then move the puree in with the garlic once it's golden. Add basil, sugar, and a little salt, and just let it reduce down to about 3/4 of a cup.

It's always up to the engineers to slap some shit together that they just learned about yesterday and was needed last week.

  • Yeah, I felt this way when I was 32. Felt like the realization that I was trans just slapped me in the face and I knew I'd regret not doing it but also so very terrified. I kept looking at r/transtimelines and seeing the dead looks in most of the before pictures and seeing how they lit up after. I also read some advice somewhere that every step along the way is reversible, up to a point. You can go see a therapist that deals with gender questions. You can go see an endocrinologist. You can walk out of there with a prescription, but you don't have to fill it. You can get it filled, but you don't have to take it. You can take it but you don't have to keep taking it. You won't notice anything for a month or so, so you can feel it out and see what you think.

    What really helped me was going to the nearest accepting city (Asheville, NC) and just living the entire visit as my chosen gender. We stayed on a skoolie with a hot tub outside and it was a wonderful trip. I also got all dressed up and spent the day in my hammock on mushrooms and did a lot of soul searching. Everytime I asked myself if I was happy with what I was doing, I felt like I was hugging myself back with gratitude for finally letting Eliza have a chance. That feeling has stuck with me ever since.

    And yeah, I started at 33, you're not running out of time. I do wish I realized earlier, but you only get one shot at this life thing and you might as well start living for yourself today.

    After over 4 years of my E6000 glue job holding up, i guess its finally time...

    It was really nice driving home, though, so I'm pretty stoked that the Sierra top I ordered is zippered glass. Always nice to install an upgrade instead of just boring maintenance. Of course I pulled the trigger on a new Rega P3 50th Anniversary turntable right before finding this... when it rains it pours!

    My favorite picture from San Juan Capistrano

    Went on a East Coast to West Coast and back road trip last year and stopped in so many beautiful places. My heart is still in Santa Fe but San Juan Capistrano was beautiful as well.

    I have been looking for the trans content here and didn't see the transpositive and transtimelines, glad I finally found something. Anyways, here's me, ~2.252 years HRT (4/20/2021). I work in the hydrogen industry as an engineer and I enjoy cooking and driving my Miata a little too fast until my partner gets sick (that's how I know I'm doing good). Currently 35 years old, for reference or whatever
