Just got proxmox working, thread decides what I do with it.

Testing running proxmox on an old laptop.

AMD, decently spec'd . 8 cores, 32 GB ram, 2070 TI.

Tell me what you want me to install and run or what severs I should try running and I will until I get bored from it?

One big VM dedicated to BOINC project of your choosing.
Leave it open and unsecured on the internet and see what happens
home assistant. openwrt. emu an XP box

push all of that to jellyfin (i'm in the process of giving uo on plex).
opensense - do a firewall on a stick.

Vaultwarden, home assistant, jellyfin, nextcloud.
Some more thoughts:
Some NAS stack (I use TruNAS).
Photo / image management (owncloud/nextcloud/Immich etc).
Location tracking: Dawarich / reitti.
Docker manager of some sort
Upgrade it to 9.0
