if it was true E2EE google wouldn’t be able to use your emails to train their ai and sell you garbage
I'm pretty sure e2ee wouldn't stop this, since your emails in your inbox would be decrypted.

Yes they could.
Remember it is only the email that is encrypted, they can track what you do in the browser. After all, google have the private keys for your TLS session to Gmail.
