My wife likes big story games (Witcher 3, Horizon, etc.) but hates the combat ... So, back when we still had time for games like that, I would do all the gameplay and she would make all story or dialogue decisions. It was a nice paradigm that let us both enjoy the parts that most interested us.
I absolutely hate Hanafuda cards and rhythm games, so when they pop up in a random game (e.g. Yakuza series), I have my SO play them, because they love those games. Works out well for us.
My wife has aquaphobia and I sometimes do underwater sections of games for her. Any 3D game where you can run out of air or be attacked while underwater is triggering.
