That looks like a nice plot, thank you for sharing the picture. I always struggled on the best time to trim the old canes, do you prefer to do that in the fall after fruiting or spring?
I usually wait until all the leaves fall off. Pruning can happen any time between late autumn to late winter. I leave some alone that are newer and chop the older crustier ones

Yes I have eaten raspberries, directly from the plant even, but I've been using computers daily and professionally for over 40 years and raspberries less than a month per year and most years not.
