Birria (a traditional Mexican dish from the state of Jalisco made from slow-cooked fall-apart juicy and tender beef in a rich and flavorful red chile broth, or consomé). Recipe Link in Post Body.
Jfc, the firsttime I had birria, I was dating a girl in high school from mexico. Her mom liked me a lot, so I got invited to dinner for the six or seven months we dated.
It was so fucking good. Like so good you wanna go slap something and crow like a madman madman good.
Then they had to move, and it was years before I had it again. We finally got a decent Mexican place in our smallish town that did a good birria. Not as good as Sra. Mendoza's, but pretty damn good. Ngl, I missed her cooking more than her daughter lol.
Fantastic looking recepie! Been getting really into braising this year for fun cooking and meal prep.
Any ideas on where to get high quality beef broth? Been able to consistently make my own pork, chicken, or veggie stock, but I never seem to get beef bones.
