Low-Carb Eggplant Bites

This is for dinner tonight. Topping it with Salmon and serving with farro. So excited!

How'd it turn out? I love eggplant, but I don't have many simple recipes.
- Delicious but maybe chicken sausage instead of salmon if you're going to add meat.
