I mean, obviously I'm biased, but Space Quest III just had one of the most amazing kick-ass soundtracks. Composed by Bob Siebenberg, the drummer from Supertramp!

Almost all of the Sierra games, but most especially King's Quest VI. Space Quest III and IV are definitely close, though.
I even have them all on my Plex server so I can listen to them anytime. Often in the shower. Oh, wait, TMI? Sorry.
