Two weeks isn't enough time to train someone to handle over 1200 people and our menu. I do not work a conventional kitchen, as I already said.

I'm not American and don't really understand your system. What I would like to say is, being in a situation where you can't get a day off or be sick (because thats the same problem) is not healthy. I hope you find a job where you can actually take a personal day once in a while.
