Chicken Of The Woods

The woods were absolutely full of these. Found at least 10 patches.

  How do you cook them?
What region, if you don't mind saying? I've always wanted to try these but have never come across them (US PNW).
- US PNW. I have encountered them before in one specific location at this time of year but this year they were all over the place. It seems so specific to weather history since I didn't find any of the other varieties I usually do. I also found white chanterelles when I never have before.
  
  Interesting, thanks for sharing. I've never seen chanterelles this time of year, either, but I know that they're out there.
