DS2 wasn't really bad to 100% but the shrine of winter does slow it down a bit. And yes i liked DS2! Especially when it let's you join the champion covenant at the start without telling you what it does 🙃😅
But really these days 100% any of them isn't that hard when they have step by step guides lol.

Ds1 wasn't bad because the most you had to upgrade a covenant to was +2 and everything for that was easily farmable. You had to get to anor londo on new game +2 because you had to kill the good girl Sif 3 times to get all the items made from her soul.
