I think the final Kelpien design was the better choice. Sci-fi prosthetics are always awful, and while Saru turned out fairly decent, I doubt this would have had a similar outcome:
But just imagine the "Doug Jones walks into things" gag reel...
Forgive me for saying this, but the final Kelpian design looks much, um, tastier than the original one. I can't imagine Terrans looking at a green and brown multi-eyed triangular headed alien and think "delicacy".
