What video games would you rather watch someone else play than play it yourself?
For me, it is any city/building construction game like City Skylines, Two Point Hospital, Planet Zoo etc.

It's crazy how polished a lot of those videos are. Blooprint, Wiilljem, Frost, etc are so much fun to watch, but I know I don't have the mentality to deal with losing everything, and I suck a fps.
Don't forget the time invest needed to simply guard your base.
